Easy Sunday Supper

D18 and Scott are watching the final Yankees game; D18’s feeling kinda sick; and a light dinner seemed good.  I have all these tomatoes from my garden to use up.  Here’s the simple supper:

A nice fresh loaf of Pepperidge Farm Jewish Rye bread.

Homegrown tomatoes, thickly sliced.

Choice of cheddar, swiss, or fresh mozzarella cheese.

Basil leaves, if mozzarella is chosen.

We used no mayo–because the bread was so fresh, it was not necessary.  I salted and peppered the tomato slices.  

Yum.  And easy.

    Ok, this was an amazing sandwich (a little like bruschetta). We tried the mozzarella and basil version. I lightly toasted the bread first then put the assembled sandwich (open-faced) under the broiler until the cheese melted. Mmmm good!
