My First Roasted Chicken

I’d never roasted a chicken in 30 years of homemaking.  I thought it sounded like something that would be dry, tough and flavorless.

    I’ve done roasted chicken — quite edible, but nothing to write home about. I will try this method! There’s never enough dark meat on a chicken, though.

    This was definitely something to write home about!

    Oh, and the mustard–ew….totally superfluous. It was way too yummy to put mustard on it.
