Indian Chicken Curry

This was a delicious dinner tonight! Curried Chicken with Cashews

It was really easy to put together. I modified the recipe above by using a package of boneless chicken thighs, which I cut into quarters. Instead of cilantro, I used fresh mint leaves, and I added some chopped red bell pepper at the end (when adding the yogurt and chopped cashews) to give it some color.

I used a little less cayenne pepper than the recipe called for and it was still pretty hot.

    By the way, the meal you provided was phenomenal. The chicken was fantastic, the green beans were better than green beans are allowed to be, and the wine was terriffic. I felt like I was eating at one of those expensive restaurants in NY that you so regularly frequent!
